I never ate asparagus until about a year ago. Growing up I always thought it was more for adults and people eating at fancy restaurants. I first tried asparagus served with eggs Benedict and they were amazing.
This got me thinking about other ways I could make asparagus to go with breakfast food. I had seen other types of vegetables wrapped in bacon so I decided to give it a try and it was amazing. Here is what I did.
I decided to use Turkey Bacon (because I wanted it to be a little healthier).
I added a drizzle of oil and salt and pepper to taste. I then baked them at 400 degrees for 20 minutes.
