After my success with making blueberry muffins from scratch that got me thinking about what other kinds of muffins might be good. Since I had a couple of apples sitting on my counter that were starting to go bad I decided to try my hand at apple cinnamon muffins.

These are the ingredients that I used:

2 cups flour

1 tbsp baking powder

3/4 tsp salt

1/2 cup (1 stick) of butter, melted

3/4 cup sugar, white

2 large eggs

1/2 cup apple sauce

1/2 tbsp vanilla extract

1/2 tsp almond extract

1 tsp cinnamon

4 apples chopped


I started by mixing together all the dry ingredients first then added in the wet. (All except the diced apples.)


Once the batter was smooth, I gently folded in the diced apple pieces.


I put the batter into a lined muffin tin.


The last part was to mix up a cinnamon sugar mixture for the top. To do this I mixed 1/3 cup of white sugar with 1 tsp of ground cinnamon.


I then sprinkled it on top of each muffin.


Lastly I baked them at 375 degrees for 30 minutes. The tops should just start to brown.
