After living overseas for the past 4 years having limited access to fresh produce, I could not resist the abundance of fresh blueberries that I see in all the grocery stores here in Phoenix. So that got me thinking about what I could make with them. Then an idea struck. Blueberry muffins. For years I had been using the box mixes, but if I could make cakes and breads from scratch why not muffins. So I went to work researching what makes a good muffin and after some trial and error, came up with a great recipe that I will share below. Luckily for me, I also have in my house an amazing videographer who I convinced to video how I made the muffins and I will be sharing it at the end of this post. 

Ingredients:

2 cups flour

1 tbsp baking powder

3/4 tsp salt

1/2 cup (1 stick) butter, melted

1 cup sugar, white

2 large eggs

1/2 tbsp vanilla extract

1/2 tsp almond extract

1/2 cup milk

1 pint fresh blueberries

2 tbsp brown sugar (for toppings)


Start by mixing the dry ingredients, then add the wet ingredients. Do not add the blueberries until the end. Make sure the batter is well mixed and smooth.


Next slowly fold into the batter the blueberries. I use a fork to mix it to make sure the blueberries do not break. Make sure you do not over mix.


Next fill your muffin liners/cup about 2/3 the way with batter.


Sprinkle the tops with the brown sugar.


Bake them at 375 degrees for 30 minutes until the tops start to golden.
